It makes little sense lol jk. What do you want to do? Just play music? If so, it doesn't really matter what kind of cable you use. The only time you would absolutely need to use spdif is if you want surround sound 5.1 dolby digital.
You just take a coax from the spdif output on the 800 and put it to an input spdif on your stereo if it has one. However, I'm not so sure that a 2 speaker stereo will have spdif in. If that is the case, you can just go ahead and use two coaxs (white and red, left and right) and a combination of adapters as necessary.

I have a 800 series touchsmart. I wish to connect it to the stereo in my kitchen (where the touchsmart is located). Is this as simple as running a cable from the SPDIF on the touchsmart to the stereo? If so, given that I would only use the stereo for listening to music via the stereo speakers (no 5.1 or anything) how would I plug it in to the stereo (i.e. a single coaxial cable out of the touchsmart into what on my stereo?). Is some sort of converter cable required? Any links to examples appreciated!

You can also use the regular speaker out port (3.5mm) to run the wiring over to the stereo, and (as said) use adapters to change it to standard RCA inputs (if that is what it has, those are the standard, even today). I know they make that adapter and it is quite inexpensive.
