The usual Vista/XP way to handle this is to record the videos in a user specific folder with security as an admin user, then share it out as Read Only to the child users, this will prevent them from having the ability to delete.
Tie this in with an autologon in the kids name.

Is it possible to remove the options after a video is finished? (prefereces?)
So that it returns to the "main" start window (with the the rest of the video/movies)
Is it possible to "lock" or set the preferences so the users only can watch these videos and do nothing else on the computer without password? (childrenlock)

Diane makes a good point. If you have your own login and set your files and foldes as "not shared" then create a login for other users, then they will not have access to those (your) files.
Another option (and I use this one becasue I have a MediaSmart Connect) is to use the pocket media drive. You can get the drives pretty cheap and store all your videos on it - or an external USB drive for that matter.
Also, you weren't specific as to which video player program you were talking about. Windows Media Center, Windows Mediaplayer, or the HP programs. EDIT: oops, sorry it helps if I read the title. You were talking about Windows Media Center.
