Mahjong Titans, one of the standard Windows Vista games, can keep me occupied for hours :)
In terms of non-touch oriented games, I find that the Sims works particularly well with the touch technology--you just touch another Sim, piece of furniture or location, then touch the interaction you want your Sim to have with it. The mouse is still necessary for scrolling around and zooming in and out, but on the whole it seems to work very well just using my finger.
What are the best touch enabled games you have found? (Like the touch games you find in some bars)

For me the best are:
World of Goo
Crayon
For my daughter is purple place by microsoft.
But i'm also looking for more touch and multitouch Games and apps.(besides airhockey).
