Word on the street is that future updates to the Nextwindow drivers may support more than two touches, but there will always be accuracy issues with more than one touch due to the optical sensor approach to detecting your fingertips. It's cost-effective for a large screen, but for full multi-touch you need a true touch-sensitive screen.
I'm thinking about buying the 816 but I've read contradicting reviews on the multitouch capabilities. Some say it's only a dual touch but I keep reading multitouch. When I went to see a store model, I couldn't quite find any software installed that would allow me to test. Does anyone know which it is, and what software will show these capabilities?

For those of you who have the same question as me, I have done the research and have found that the HP touchscreen is a Next-Window product which only supports dual-touch. There is confusion out there because many think multitouch means more than one. The word is deceiving. The HP, supposedly, can not detect more than two touches, so if you are buying this product to play the piano, I suggest you just buy a piano keyboard that plugs into the computer (certainly these exist). On the other hand, two-touch is still pretty darn cool and I am looking forward to experimenting with this, but I hesitate to go out and buy when a true multi-touch might be around the corner. I wish I knew.
